
Crab and Avocado Omelette

- Green onions (2, chopped)
- Cheddar cheese (1/2 cup, shredded)
- Avocado (1, sliced)
- Crab meat (1 cup, cooked and shredded)
- Eggs (4)
Instructions
- In a bowl, beat the eggs and season with salt and pepper.
- Heat butter in a non-stick skillet over medium heat.
- Pour the beaten eggs into the skillet and cook until the edges start to set.
- Sprinkle the crab meat, avocado slices, cheddar cheese, and green onions evenly over one half of the omelette.
- Fold the other half of the omelette over the filling and cook for another 2-3 minutes, or until the cheese is melted and the omelette is cooked through.
