Servings: 2

Ingredients

  • Fresh chives (2 tablespoons, chopped)
  • Black pepper (to taste)
  • Salt (to taste)
  • Unsalted butter (1 tablespoon)
  • Milk (2 tablespoons)
  • Eggs (3 large)
  • Cheddar cheese (1/2 cup, shredded)
  • Crab meat (1 cup, cooked and flaked)

Instructions

  1. In a medium-sized bowl, whisk together the eggs and milk until the mixture is smooth and well combined. Season with salt and black pepper according to your preference.
  2. In a non-stick skillet, melt the unsalted butter over medium heat. Swirl the butter around to ensure the pan is evenly coated and the butter is bubbling.
  3. Pour the egg mixture into the skillet, tilting the pan to spread it evenly. Allow it to cook undisturbed for about 1 minute, or until the edges begin to set.
  4. Evenly distribute the flaked crab meat, shredded cheddar cheese, and chopped chives over one half of the omelette.
  5. Using a spatula, gently fold the other half of the omelette over the filling to create a half-moon shape.
  6. Continue cooking for an additional 2-3 minutes, or until the cheese has melted and the omelette is cooked through yet remains tender.
  7. Carefully slide the omelette onto a plate and serve hot, garnished with extra chives if desired.
