1/2 teaspoon
Salt
1/2 teaspoon
Baking powder
1 teaspoon
All-purpose flour
1/2 cup
Egg
1, beaten
Red bell pepper
1/2 cup, finely chopped
Green onions
1/4 cup, finely chopped
Corn kernels
1 cup, fresh or frozen
Fresh crab meat
1 cup, picked over for shells

Instructions

  1. In a large bowl, gently combine the fresh crab meat, corn kernels, chopped green onions, and red bell pepper until evenly distributed.
  2. In a separate bowl, whisk together the beaten egg, all-purpose flour, baking powder, salt, and black pepper until smooth.
  3. Carefully pour the egg mixture over the crab and corn mixture. Fold gently until just combined; be careful not to overmix.
  4. Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot.
  5. Using a spoon, drop generous spoonfuls of the fritter batter into the hot oil, flattening slightly with the back of the spoon.
  6. Cook the fritters for 2-3 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
  7. Once cooked, remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.
  8. Serve the crab and corn fritters hot, accompanied by a zesty lime aioli.
