- Fresh crab meat
- 1 cup, picked over for shells
Instructions
- In a large bowl, gently combine the fresh crab meat, corn kernels, chopped green onions, and red bell pepper until evenly distributed.
- In a separate bowl, whisk together the beaten egg, all-purpose flour, baking powder, salt, and black pepper until smooth.
- Carefully pour the egg mixture over the crab and corn mixture. Fold gently until just combined; be careful not to overmix.
- Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot.
- Using a spoon, drop generous spoonfuls of the fritter batter into the hot oil, flattening slightly with the back of the spoon.
