Instructions
- In a large bowl, gently combine the fresh crab meat, corn kernels, chopped green onions, and red bell pepper until evenly distributed.
- In a separate bowl, whisk together the beaten egg, all-purpose flour, baking powder, salt, and black pepper until smooth.
- Carefully pour the egg mixture over the crab and corn mixture. Fold gently until just combined; be careful not to overmix.
- Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot.
- Using a spoon, drop generous spoonfuls of the fritter batter into the hot oil, flattening slightly with the back of the spoon.
- Cook the fritters for 2-3 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.
- Serve the crab and corn fritters hot, accompanied by a zesty lime aioli.
Tips
- For extra flavor, consider adding spices like paprika or cayenne pepper to the batter for a kick.
- If fresh crab is unavailable, you can substitute with canned crab meat, ensuring to drain it well.
- These fritters can also be baked in the oven at 375°F (190°C) for a healthier option; simply place them on a lined baking sheet and bake for about 20 minutes, flipping halfway through.
