Ingredients
- Chicken broth
- 4 cups
- Grits
- 1 cup
- Unsalted butter
- 2 tablespoons
- Garlic
- 3 cloves, minced
- Green onions
- 1/2 cup, chopped (plus extra for garnish)
- Heavy cream
- 1/2 cup
- Crab meat
- 1 pound, cooked and picked over for shells
- Old Bay seasoning
- 1 tablespoon
- Salt
- to taste
- Black pepper
- to taste
- Lemon wedges
- for serving
Instructions
- In a medium saucepan, bring the chicken broth to a rolling boil over medium heat.
- Slowly whisk in the grits, stirring continuously to prevent lumps. Reduce the heat to low and cover the saucepan.
- Simmer the grits for 20 minutes, stirring occasionally, until they are tender and creamy. If the grits become too thick, add a splash of water or additional chicken broth to reach your desired consistency.
- While the grits are cooking, melt the butter in a separate skillet over medium heat.
- Add the minced garlic and chopped green onions to the skillet. Sauté for about 2-3 minutes, until the garlic is fragrant and the green onions are tender.
- Gently fold in the crab meat and sprinkle with Old Bay seasoning. Cook for another 5 minutes, stirring occasionally, to warm the crab through.
- Pour in the heavy cream and stir until well combined. Season with salt and pepper to taste.
- To serve, spoon the creamy grits onto plates or bowls. Top with the crab mixture and garnish with additional chopped green onions.
- Serve hot with lemon wedges on the side to squeeze over the dish for an added burst of flavor.
