Servings: 4

Ingredients

Chicken broth
4 cups
Grits
1 cup
Unsalted butter
2 tablespoons
Garlic
3 cloves, minced
Green onions
1/2 cup, chopped (plus extra for garnish)
Heavy cream
1/2 cup
Crab meat
1 pound, cooked and picked over for shells
Old Bay seasoning
1 tablespoon
Salt
to taste
Black pepper
to taste
Lemon wedges
for serving

Instructions

  1. In a medium saucepan, bring the chicken broth to a rolling boil over medium heat.
  2. Slowly whisk in the grits, stirring continuously to prevent lumps. Reduce the heat to low and cover the saucepan.
  3. Simmer the grits for 20 minutes, stirring occasionally, until they are tender and creamy. If the grits become too thick, add a splash of water or additional chicken broth to reach your desired consistency.
  4. While the grits are cooking, melt the butter in a separate skillet over medium heat.
  5. Add the minced garlic and chopped green onions to the skillet. Sauté for about 2-3 minutes, until the garlic is fragrant and the green onions are tender.
  6. Gently fold in the crab meat and sprinkle with Old Bay seasoning. Cook for another 5 minutes, stirring occasionally, to warm the crab through.
  7. Pour in the heavy cream and stir until well combined. Season with salt and pepper to taste.
  8. To serve, spoon the creamy grits onto plates or bowls. Top with the crab mixture and garnish with additional chopped green onions.
  9. Serve hot with lemon wedges on the side to squeeze over the dish for an added burst of flavor.
