
Crab Bisque
This creamy and flavorful crab bisque is made with fresh crab meat, vegetables, and a touch of sherry.
Ingredients
- Fresh parsley (for garnish)
- Salt and pepper (to taste)
- Paprika (1/2 teaspoon)
- Sherry (2 tablespoons)
- Crab meat (1 pound, cooked and shredded)
- Heavy cream (1 cup)
- Chicken broth (4 cups)
- All (purpose flour - 1/4 cup)
- Garlic (3 cloves, minced)
- Carrot (1 medium, finely chopped)
- Celery (2 stalks, finely chopped)
- Onion (1 medium, finely chopped)
- Butter (4 tablespoons)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion, celery, carrot, and minced garlic. Cook until the vegetables are tender, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to coat.
- Gradually pour in the chicken broth, stirring constantly to prevent lumps.
- Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the heavy cream, crab meat, sherry, paprika, salt, and pepper.
- Simmer for another 10 minutes, until heated through.
- Serve hot, garnished with fresh parsley.
