- Fresh parsley (2 tablespoons, finely chopped)
- Egg (1, beaten)
- Breadcrumbs (1 cup, plus more for coating)
- Vegetable oil (for frying)
- Lemon wedges (for serving)
Instructions
- In a large mixing bowl, gently combine the fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped parsley, and beaten egg. Mix until just combined to preserve the crab's delicate texture.
- Gradually fold in the breadcrumbs until the mixture holds together. If too wet, add additional breadcrumbs as needed.
