
Cream of Asparagus Soup
This creamy and flavorful asparagus soup is perfect for a light and comforting meal.
Ingredients
- Chives (2 tablespoons, chopped (for garnish))
- Salt and pepper (to taste)
- Heavy cream (1 cup)
- Vegetable broth (4 cups)
- Garlic (2 cloves, minced)
- Onion (1 medium, chopped)
- Butter (2 tablespoons)
- Asparagus (1 pound, trimmed and cut into 1-inch pieces)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the asparagus pieces and cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the asparagus is tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
- Simmer for another 5 minutes to heat through.
- Serve the soup hot, garnished with chopped chives.
