Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes, stirring occasionally to prevent burning.
- Add the asparagus pieces and cook for an additional 5 minutes, allowing them to soften slightly.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the asparagus is tender.
- Using an immersion blender, carefully puree the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.
- Return the pureed soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
- Simmer for another 5 minutes to heat through, stirring occasionally.
- Serve the soup hot, garnished with chopped chives for a fresh, onion-like flavor.
Tips
- For a bit of added flavor, you can sprinkle some freshly grated Parmesan cheese on top before serving.
- If you prefer a lighter version, you can substitute half of the heavy cream with milk or use a plant-based cream alternative.
- Consider adding a squeeze of lemon juice before serving to brighten the flavors.
