Cream of Broccoli Soup
Indulge in a bowl of comfort with this Cream of Broccoli Soup. This recipe combines fresh, vibrant broccoli with a rich, creamy base to create a soup that warms you from the inside out. The delicate balance of flavors, the velvety texture, and the subtle hint of garlic make this soup a delightful culinary experience. Not to mention, this dish pays homage to the classic French 'Potage Parmentier' but with a green twist.
Servings: 4
Ingredients
- Grated cheddar cheese
- 1 cup
- Salt and pepper
- to taste
- Heavy cream
- 1 cup
- Chicken or vegetable broth
- 4 cups
- All-purpose flour
- 2 tablespoons
- Butter
- 2 tablespoons
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, chopped
- Broccoli
- 4 cups, chopped
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Saute until the onion is translucent, about 5 minutes.
- Add the chopped broccoli and cook for another 5 minutes until it starts to soften.
- Sprinkle the flour over the vegetables, stirring well to coat them. This will help thicken your soup.
- Gradually pour in the chicken or vegetable broth, stirring continuously. Bring the mixture to a boil.
- Reduce the heat to low and let the soup simmer for 15 minutes, or until the broccoli is tender.
- Using an immersion blender or transferring the soup to a regular blender, puree the soup until it reaches a smooth consistency. If using a regular blender, do this in batches and return the soup back to the pot.
- Stir in the heavy cream and season with salt and pepper to taste. Let the soup simmer for another 5 minutes to heat through.
- Serve your Cream of Broccoli Soup hot, garnished with a generous sprinkle of grated cheddar cheese. A crusty piece of bread on the side would make a wonderful addition!
