Indulge in a bowl of comfort with this Cream of Broccoli Soup. This recipe combines fresh, vibrant broccoli with a rich, creamy base to create a soup that warms you from the inside out. Ingredients

Grated cheddar cheese
1 cup
Salt and pepper
to taste
Heavy cream
1 cup
Chicken or vegetable broth
4 cups
All-purpose flour
2 tablespoons
Butter
2 tablespoons
Garlic
2 cloves, minced
Onion
1 medium, chopped
Broccoli
4 cups, chopped

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Saute until the onion is translucent, about 5 minutes.
  3. Add the chopped broccoli and cook for another 5 minutes until it starts to soften.
  4. Sprinkle the flour over the vegetables, stirring well to coat them. This will help thicken your soup.
  5. Gradually pour in the chicken or vegetable broth, stirring continuously. Bring the mixture to a boil.
  6. Reduce the heat to low and let the soup simmer for 15 minutes, or until the broccoli is tender.
  7. Using an immersion blender or transferring the soup to a regular blender, puree the soup until it reaches a smooth consistency. If using a regular blender, do this in batches and return the soup back to the pot.
  8. Stir in the heavy cream and season with salt and pepper to taste. Let the soup simmer for another 5 minutes to heat through.
  9. Serve your Cream of Broccoli Soup hot, garnished with a generous sprinkle of grated cheddar cheese. A crusty piece of bread on the side would make a wonderful addition!
