Instructions
- Thoroughly wash the spinach under cold water, ensuring all grit is removed. Remove any tough stems and set aside.
- In a large pot, melt the unsalted butter over medium heat. Allow it to foam slightly without browning.
- Add the minced garlic to the pot and sauté for about 1 minute, or until fragrant but not browned.
- Add the fresh spinach to the pot, stirring frequently, and cook until wilted, approximately 5 minutes. Remove from heat.
- In a separate saucepan, combine the softened cream cheese and heavy cream over low heat. Stir continuously until the mixture is melted and smooth.
- Pour the melted cream cheese mixture into the pot with the wilted spinach and stir well to combine.
- Add the grated Parmesan cheese, nutmeg, salt, and black pepper to the spinach mixture. Stir until the cheese is melted and the sauce is creamy, cooking for an additional 2-3 minutes.
