Ingredients

Fresh spinach
2 pounds, thoroughly washed and tough stems removed
Unsalted butter
2 tablespoons
Garlic
3 cloves, minced
Cream cheese
8 ounces, softened
Heavy cream
1 cup
Parmesan cheese
1/2 cup, grated
Nutmeg
1/4 teaspoon, freshly grated
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste

Instructions

  1. Thoroughly wash the spinach under cold water, ensuring all grit is removed. Remove any tough stems and set aside.
  2. In a large pot, melt the unsalted butter over medium heat. Allow it to foam slightly without browning.
  3. Add the minced garlic to the pot and sauté for about 1 minute, or until fragrant but not browned.
  4. Add the fresh spinach to the pot, stirring frequently, and cook until wilted, approximately 5 minutes. Remove from heat.
  5. In a separate saucepan, combine the softened cream cheese and heavy cream over low heat. Stir continuously until the mixture is melted and smooth.
  6. Pour the melted cream cheese mixture into the pot with the wilted spinach and stir well to combine.
  7. Add the grated Parmesan cheese, nutmeg, salt, and black pepper to the spinach mixture. Stir until the cheese is melted and the sauce is creamy, cooking for an additional 2-3 minutes.
  8. Taste and adjust seasoning if necessary. Serve hot, garnished with extra Parmesan if desired.
