Instructions
- Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.
- Pour in the heavy cream and bring to a gentle simmer. Allow it to cook for 2-3 minutes, stirring occasionally, until the cream starts to thicken slightly.
- Reduce the heat to low, then stir in the crumbled blue cheese and grated Parmesan cheese. Continue to stir until both cheeses are fully melted and the sauce is creamy and smooth.
- Season the cheese sauce with salt and black pepper to taste, adjusting as needed based on the saltiness of the blue cheese.
- Add the cooked linguine to the skillet, tossing well to coat the pasta in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to loosen it up.
