Creamy Garlic Parmesan Risotto

Ingredients

Butter
2 tablespoons
Garlic
4 cloves, minced
Arborio rice
1 cup
White wine
1/2 cup
Chicken broth
4 cups, heated
Heavy cream
1/2 cup
Parmesan cheese
1 cup, grated
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. In a large saucepan, melt the butter over medium heat.
  2. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Stir in the arborio rice, cooking for about 2 minutes until the grains are coated in the butter and turn slightly translucent.
  4. Pour in the white wine and stir continuously until it is mostly absorbed by the rice.
  5. Begin adding the heated chicken broth, 1/2 cup at a time. Stir constantly and wait for each addition to be absorbed before adding the next. This process should take about 18-20 minutes.
  6. Once the rice is tender and creamy, remove the pan from the heat. Stir in the heavy cream and grated parmesan cheese until smooth and creamy.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with chopped parsley.
