Indulge in this Creamy Scalloped Cauliflower – a culinary masterpiece that combines the tenderness of cauliflower with a velvety cheese sauce. This comforting side dish, laden with a garlic-infused creamy sauce and topped with golden-browned Cheddar cheese, is the perfect accompaniment to any meal and a creative twist on the classic potato dish. Originally a French cuisine staple, this version replaces potatoes with cauliflower for a lighter, yet still indulgent, experience.

Servings: 6

Ingredients

Fresh parsley
2 tablespoons, finely chopped
Salt and pepper
to taste
Cheddar cheese
2 cups, shredded
Milk
2 cups
All-purpose flour
2 tablespoons
Garlic
2 cloves, minced
Unsalted butter
2 tablespoons
Cauliflower
1 large head, cut into florets

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Arrange the cauliflower florets evenly in the prepared baking dish.
  3. In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Sprinkle the flour over the butter and garlic, stirring continuously until a thick paste forms. This is your roux, which will thicken the sauce.
  5. Slowly pour in the milk, whisking constantly to prevent lumps. Continue to cook, stirring frequently, until the sauce thickens and comes to a low boil.
  6. Remove the saucepan from heat, and gradually add in the shredded cheddar cheese, stirring until the cheese is completely melted and the sauce is smooth. Season with salt and pepper to taste.
  7. Pour this creamy cheese sauce evenly over the cauliflower florets, ensuring all pieces are generously coated.
  8. Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and the top has turned a gorgeous golden brown.
  9. Remove from oven and let it cool for a few minutes. Sprinkle with freshly chopped parsley before serving. Enjoy this creamy, cheesy delight!
