Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
- Arrange the cauliflower florets evenly in the prepared baking dish.
- In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Sprinkle the flour over the butter and garlic, stirring continuously until a thick paste forms. This is your roux, which will thicken the sauce.
- Slowly pour in the milk, whisking constantly to prevent lumps. Continue to cook, stirring frequently, until the sauce thickens and comes to a low boil.
- Remove the saucepan from heat, and gradually add in the shredded cheddar cheese, stirring until the cheese is completely melted and the sauce is smooth. Season with salt and pepper to taste.
