- Fresh thyme (4 sprigs)
- Bay leaves (2)
- Chicken broth (4 cups)
- Celery stalks (2, chopped)

- Onion (1, chopped)
- Olive oil (2 tablespoons)
- Black pepper (1 teaspoon)
- Salt (2 teaspoons)
- Pork shanks (4)
Instructions
- Preheat the oven to 300°F.
- Season the pork shanks with salt and pepper.
- Heat the olive oil in a large oven-safe pot over medium-high heat. Add the pork shanks and brown on all sides, about 10 minutes. Remove from the pot and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
- Add the chicken broth, bay leaves, and thyme to the pot. Bring to a simmer.
- Return the pork shanks to the pot. Cover and transfer to the oven. Cook for 2.5 hours, or until the pork is tender.
- Remove the pot from the oven. Transfer the pork shanks to a baking sheet.
- Preheat the broiler. Broil the pork shanks until the skin is crispy, about 5 minutes.
- Serve the pork shanks with the vegetables and broth from the pot.
