Ingredients
- Whole chicken
- 1 (about 4-5 lbs)
- Lemon
- 1, halved
- Garlic
- 5 cloves, crushed
- Fresh thyme
- 1 bunch
- Olive oil
- 3 tablespoons
- Black pepper
- 1 teaspoon, freshly ground
- Salt
- 1 tablespoon, or to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out under cold water, then pat dry thoroughly with paper towels to ensure crispy skin.
- Season the inside of the chicken generously with salt and black pepper.
- Stuff the chicken cavity with the halved lemon, crushed garlic cloves, and fresh thyme, making sure to pack them in for maximum flavor.
- Rub the outside of the chicken with olive oil, ensuring an even coating, then season the exterior generously with salt and black pepper.
- Place the chicken in a roasting pan, breast side up, ensuring it has enough space to roast evenly.
- Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh and the skin is golden brown and crispy.
- Once done, remove the chicken from the oven and let it rest for at least 15 minutes before carving to allow the juices to redistribute.
