Croque Madame Au Jambon

Ingredients
- Salt
- to taste
- Black pepper
- to taste
- Eggs
- 2, for frying
- Butter
- 2 tablespoons
- Dijon mustard
- 2 teaspoons
- Gruyere cheese
- 4 slices
- Ham
- 4 slices
- Bread
- 4 slices
Instructions
- Spread a thin layer of Dijon mustard on one side of each bread slice.
- Layer two slices of ham and two slices of Gruyere cheese on top of the mustard on two bread slices.
- Top with the remaining bread slices to form sandwiches, mustard-side down.
- In a large skillet, melt the butter over medium heat until it starts to foam.
- Add the sandwiches to the skillet and cook until the bottom is golden brown, about 3-4 minutes.
- Flip the sandwiches and cook the other side until golden brown and the cheese has melted, another 3-4 minutes.
- In a separate skillet, melt a small knob of butter and fry the eggs to your preferred doneness.
- Place a fried egg on top of each sandwich.
- Season the eggs with a pinch of salt and freshly ground black pepper.
- Serve your Croque Madame Au Jambon immediately while the cheese is still melty and the egg is warm.
