Crostini Con Funghi

Ingredients

  • Parmesan cheese (1/2 cup, grated)
  • Salt and pepper (to taste)
  • Thyme (1 teaspoon, fresh)
  • Mixed mushrooms (2 cups, sliced)
  • Garlic (2 cloves, minced)
  • Olive oil (2 tablespoons)
  • Baguette (1, sliced into 1/2 inch thick rounds)

Instructions

  1. Preheat the oven to 350°F.
  2. Arrange the baguette slices on a baking sheet and brush each slice with olive oil.
  3. Bake for 10 minutes, or until the bread is golden and crispy.
  4. While the bread is baking, heat the remaining olive oil in a skillet over medium heat.
  5. Add the garlic and cook until fragrant, about 1 minute.
  6. Add the mushrooms and thyme, season with salt and pepper, and cook until the mushrooms are tender, about 5 minutes.
  7. Top each slice of bread with the mushroom mixture and sprinkle with Parmesan cheese.
  8. Return the crostini to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
