Servings: 12 crumpets
Ingredients
- Vegetable oil
- for greasing the griddle
- Butter
- for serving
- Active dry yeast
- 1 packet (2 1/4 teaspoons)
- Warm water
- 1 cup (not hot, just lukewarm)
- Milk
- 1 cup
- Granulated sugar
- 1 teaspoon
- Salt
- 1/2 teaspoon
- Baking powder
- 1 teaspoon
- All-purpose flour
- 2 cups
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In a small saucepan, combine the milk and water. Heat over medium heat until warm to the touch, but not boiling.
- Remove the milk mixture from the heat and sprinkle the yeast and sugar over it. Allow it to sit for about 5 minutes, until the yeast becomes frothy.
- Pour the yeast mixture into the dry ingredients. Using a wooden spoon or spatula, stir until all ingredients are well combined into a batter.
- Cover the bowl with a clean kitchen towel and let it rest in a warm, undisturbed area for about an hour. The batter should double in size.
- Preheat a griddle or non-stick skillet over medium heat. Lightly grease it with vegetable oil.
- Ladle the batter onto the hot griddle, forming round crumpets. Be careful not to overcrowd the pan.
- Cook each crumpet for about 3-4 minutes, until bubbles form on the surface and the edges start to solidify.
- Flip each crumpet and cook for an additional 2-3 minutes, until both sides are golden brown.
- Remove the crumpets from the griddle and keep them warm. Repeat with the remaining batter.
- Serve the crumpets warm, topped with a pat of butter and your favorite jam.
