Ingredients

Original recipe serves 1

Water
1 cup
Sugar
2 to 4 tablespoons, adjust to taste
Espresso coffee
1 shot (about 1 ounce)

Instructions

  1. Begin by boiling water in a kettle or using an espresso machine. If using a stovetop espresso maker, fill the bottom chamber with water up to the safety valve.
  2. Add finely ground espresso coffee to the filter basket of the espresso maker, leveling it off without pressing down.
  3. Once the water is boiling, pour it into the espresso maker, assemble, and place it on medium heat. If using an espresso machine, brew the shot directly.
  4. While the coffee is brewing, take a small cup and add the sugar. Pour in a tablespoon of hot water to help dissolve the sugar.
  5. Once the espresso is ready, pour it into the cup with the sugar mixture. The hot coffee will help dissolve the sugar even further.
  6. Using a spoon, vigorously stir the coffee and sugar mixture for about 30 seconds. This action creates the signature thick, frothy layer on top known as 'espuma.'
  7. Serve immediately in small cups, and enjoy your delicious Cuban coffee!
