Ingredients

Rice
1 cup, soaked for 4-5 hours
Cucumber
1 medium, grated
Coconut
1/4 cup, grated
Green chillies
1-2, chopped (adjust to taste)
Cumin seeds
1 teaspoon
Salt
to taste
Oil
for cooking

Instructions

  1. Soak the rice in water for 4-5 hours. This softens the rice and helps in blending.
  2. Once soaked, drain the water and transfer the rice to a blender.
  3. Add the grated cucumber, grated coconut, chopped green chillies, cumin seeds, and salt to the blender. Blend everything into a smooth batter, adding a little water if necessary to achieve a pourable consistency.
  4. Heat a non-stick pan over medium heat. Once hot, pour a ladleful of the batter onto the pan and spread it evenly into a thin circle.
  5. Drizzle some oil around the edges of the dosa. Cook until the bottom turns golden brown and crispy, about 2-3 minutes.
  6. Carefully flip the dosa and cook the other side for another 1-2 minutes until it is also golden.
  7. Repeat the process with the remaining batter, adding more oil as needed.
  8. Serve the cucumber dosa hot with coconut chutney or sambar for dipping.
