Cucumber Lemonade

Ingredients

  • Ice cubes (as needed)
  • Fresh mint leaves (1/4 cup, plus extra for garnish)
  • Water (4 cups, divided)
  • Granulated sugar (1/2 cup (adjust to taste))
  • Lemons (4 large, juiced (about 1 cup of lemon juice))
  • Cucumbers (2 medium, peeled and sliced)

Instructions

  1. In a blender, combine the sliced cucumbers, fresh lemon juice, granulated sugar, 2 cups of water, and the mint leaves.
  2. Blend on high speed until the mixture is smooth and well combined.
  3. Pour the blended mixture through a fine mesh sieve into a large pitcher to strain out any pulp, using a spoon to press the mixture for maximum extraction.
  4. Add the remaining 2 cups of cold water to the pitcher and stir well to combine.
  5. Chill the cucumber lemonade in the refrigerator for at least 1 hour to allow the flavors to meld.
