Speckled with mint leaves for an additional layer of refreshment, this drink pays homage to traditional Mediterranean coolers, offering a modern twist to an age-old thirst quencher.

Servings: 2

Ingredients

Ice cubes
1 cup
Honey
2 tablespoons, or to taste
Water
2 cups
Fresh mint leaves
1/4 cup, plus extra for garnish
Lime
2, juiced
Cucumber
1 large, peeled and chopped, with a few thin slices reserved for garnish

Instructions

  1. Begin by thoroughly washing the cucumber, limes, and mint leaves.
  2. Peel the cucumber, reserving a few thin slices for garnish later. Chop the remainder into chunks and place in a blender.
  3. Cut the limes in half and squeeze the juice into the blender, taking care to avoid any seeds.
  4. Add the fresh mint leaves, water, honey, and ice cubes to the blender.
  5. Blend the mixture until it's smooth and well combined, taste-testing and adding more honey if desired.
  6. Pour the refreshing mixture into glasses, using a strainer if necessary to ensure a smooth drink.
  7. Garnish the glasses with the reserved cucumber slices and a few fresh mint leaves for an appealing presentation.
  8. Serve immediately while chilled and enjoy the invigorating burst of freshness!
