Cucumber Mint Gazpacho

This refreshing cucumber mint gazpacho is a chilled soup perfect for hot summer days.

Ingredients

  • Fresh mint leaves (for garnish)
  • Cucumber slices (for garnish)
  • Olive oil (2 tablespoons)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Garlic (1 clove, minced)
  • Lemon juice (2 tablespoons)
  • Greek yogurt (1/2 cup)
  • Fresh mint leaves (1/2 cup)
  • Cucumbers (2 large, peeled and chopped)

Instructions

  1. In a blender, combine the chopped cucumbers, mint leaves, Greek yogurt, lemon juice, minced garlic, salt, and black pepper.
  2. Blend until smooth and creamy.
  3. Taste and adjust the seasoning if needed.
  4. Transfer the gazpacho to a bowl and refrigerate for at least 1 hour to chill.
