
Cucumber Mint Gazpacho
This refreshing cucumber mint gazpacho is a chilled soup perfect for hot summer days.
Ingredients
- Fresh mint leaves (for garnish)
- Cucumber slices (for garnish)
- Olive oil (2 tablespoons)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Garlic (1 clove, minced)
- Lemon juice (2 tablespoons)
- Greek yogurt (1/2 cup)
- Fresh mint leaves (1/2 cup)
- Cucumbers (2 large, peeled and chopped)
Instructions
- In a blender, combine the chopped cucumbers, mint leaves, Greek yogurt, lemon juice, minced garlic, salt, and black pepper.
- Blend until smooth and creamy.
