Ingredients

Nori sheets
4 sheets
Sushi rice
1 cup, uncooked
Rice vinegar
2 tablespoons
Granulated sugar
1 tablespoon
Salt
1/2 teaspoon
Cucumber
1 large, julienned
Pickled ginger
for serving
Wasabi
for serving
Soy sauce
for dipping

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.
  2. Once cooked, transfer the rice to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice while it's still warm, being careful not to mash it. Allow the rice to cool to room temperature.
  3. Place a sheet of nori on a bamboo sushi mat or a clean kitchen towel, shiny side down.
  4. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top (the side opposite you).
  5. Arrange the julienned cucumber slices in a single layer along the bottom edge of the rice-covered nori.
  6. Using the sushi mat or towel, tightly roll the nori and rice around the cucumber slices, applying gentle pressure to form a firm roll.
  7. Moisten the top border of the nori with a little water to seal the roll.
  8. Repeat the process with the remaining nori sheets and ingredients.
  9. Using a sharp, wet knife, slice each roll into bite-sized pieces (about 6-8 pieces per roll).
  10. Serve the cucumber sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
