Cucumber Tomato and Onion Salad

Ingredients
- Black pepper (1/2 teaspoon, freshly ground)
- Salt (1 teaspoon, or to taste)
- Lemon juice (2 tablespoons, freshly squeezed)
- Olive oil (1/4 cup, extra virgin)
- Fresh parsley (2 tablespoons, finely chopped)
- Red onion (1 medium, thinly sliced)
- Tomatoes (4 medium, ripe, diced)
- Cucumbers (2 large, peeled, seeded and sliced)
Instructions
- Prepare all the vegetables: slice the cucumbers, dice the tomatoes, and thinly slice the red onion.
- In a large bowl, combine the prepared cucumbers, tomatoes, and red onion.
- To prepare the dressing, in a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, salt, and freshly ground black pepper until well combined.
- Pour the dressing over the cucumber, tomato, and onion mixture. Toss well to ensure all the ingredients are coated with the dressing.
- Sprinkle the salad with finely chopped fresh parsley.
- Cover the salad and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together and the vegetables to marinate in the dressing.
