Ingredients

Original recipe serves 4

Black pepper
1/2 teaspoon, freshly ground
Salt
1 teaspoon, or to taste
Lemon juice
2 tablespoons, freshly squeezed
Olive oil
1/4 cup, extra virgin
Fresh parsley
2 tablespoons, finely chopped
Red onion
1 medium, thinly sliced
Tomatoes
4 medium, ripe, diced
Cucumbers
2 large, peeled, seeded and sliced

Instructions

  1. Prepare all the vegetables: slice the cucumbers, dice the tomatoes, and thinly slice the red onion.
  2. In a large bowl, combine the prepared cucumbers, tomatoes, and red onion.
  3. To prepare the dressing, in a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, salt, and freshly ground black pepper until well combined.
  4. Pour the dressing over the cucumber, tomato, and onion mixture. Toss well to ensure all the ingredients are coated with the dressing.
  5. Sprinkle the salad with finely chopped fresh parsley.
  6. Cover the salad and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together and the vegetables to marinate in the dressing.
  7. Serve the salad chilled for the most refreshing experience. Enjoy it as a side dish with grilled chicken or fish, or as a light and healthy lunch.
