
Curry Vegetable Stir Fry
This flavorful curry vegetable stir fry is packed with colorful vegetables and aromatic spices.
Ingredients
- Fresh cilantro (for garnish)
- Salt (to taste)
- Lime juice (1 tablespoon)
- Soy sauce (2 tablespoons)
- Coconut milk (1 cup)
- Green beans (1 cup, trimmed and halved)
- Bell peppers (2, sliced)
- Carrots (2, sliced)
- Cauliflower (1/2 head, cut into florets)
- Turmeric (1/2 teaspoon)
- Curry powder (2 teaspoons)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Onion (1, thinly sliced)
- Vegetable oil (2 tablespoons)
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add the onion, garlic, and ginger. Cook until the onion is translucent and fragrant, about 2-3 minutes.
- Add the curry powder and turmeric. Stir well to coat the onions and spices.
- Add the cauliflower, carrots, bell peppers, and green beans. Stir fry for 5-6 minutes, until the vegetables are crisp-tender.
- Pour in the coconut milk and soy sauce. Stir well to combine.
- Cover and simmer for 5 minutes, or until the vegetables are cooked to your liking.
- Stir in the lime juice and season with salt to taste.
- Garnish with fresh cilantro before serving.
- Serve hot with steamed rice or naan bread.
