Ingredients

Fresh cilantro
1/4 cup, chopped

Lime juice
2 tablespoons
Soy sauce
2 tablespoons
Coconut milk
1 cup
Green beans
1 cup, trimmed and halved
Bell peppers
2, sliced
Carrots
2, julienned
Cauliflower
1, small, cut into florets
Turmeric
1 teaspoon
Curry powder
1 tablespoon
Ginger
1 tablespoon, minced
Garlic
3 cloves, minced
Onion
1, large, sliced
Vegetable oil
2 tablespoons

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the sliced onion, minced garlic, and ginger. Sauté until the onion turns translucent and the mixture is fragrant, about 2-3 minutes.
  3. Stir in the curry powder and turmeric, making sure to coat the onion mixture well with the spices.
  4. Add the cauliflower florets, julienned carrots, sliced bell peppers, and halved green beans to the skillet. Stir fry the vegetables for about 5-6 minutes, until they are crisp-tender.
  5. Pour in the coconut milk and soy sauce, stirring well to combine and coat the vegetables evenly.
  6. Cover the skillet and let it simmer for about 5 minutes, or until the vegetables are cooked to your preferred tenderness.
  7. Turn off the heat and stir in the lime juice. Season the stir fry with salt according to your taste.
  8. Before serving, garnish the dish with fresh chopped cilantro. Serve this aromatic stir fry hot, ideally with steamed rice or naan bread for a complete and satisfying meal.
