Aromatic Curry Vegetable Stir Fry
Take a culinary journey to the heart of Southeast Asia with this vibrant Aromatic Curry Vegetable Stir Fry. Ingredients
- Fresh cilantro
- 1/4 cup, chopped
- Salt

- Coconut milk
- 1 cup
- Green beans
- 1 cup, trimmed and halved
- Bell peppers
- 2, sliced
- Carrots
- 2, julienned
- Cauliflower
- 1, small, cut into florets
- Turmeric
- 1 teaspoon
- Curry powder
- 1 tablespoon
- Ginger
- 1 tablespoon, minced
- Garlic
- 3 cloves, minced
- Onion
- 1, large, sliced
- Vegetable oil
- 2 tablespoons
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the sliced onion, minced garlic, and ginger. Sauté until the onion turns translucent and the mixture is fragrant, about 2-3 minutes.
- Stir in the curry powder and turmeric, making sure to coat the onion mixture well with the spices.
- Add the cauliflower florets, julienned carrots, sliced bell peppers, and halved green beans to the skillet. Stir fry the vegetables for about 5-6 minutes, until they are crisp-tender.
- Pour in the coconut milk and soy sauce, stirring well to combine and coat the vegetables evenly.
- Cover the skillet and let it simmer for about 5 minutes, or until the vegetables are cooked to your preferred tenderness.
- Turn off the heat and stir in the lime juice. Season the stir fry with salt according to your taste.
- Before serving, garnish the dish with fresh chopped cilantro. Serve this aromatic stir fry hot, ideally with steamed rice or naan bread for a complete and satisfying meal.
Tips
- Feel free to swap or add any vegetables of your choice. Mushrooms, broccoli, or snap peas would also work well in this stir fry.
