Delicious Donburi

- 2 sheets, cut into strips Nori seaweed
- 4 large Eggs
- 1 tablespoon Sugar
- 2 tablespoons Mirin
- 3 tablespoons Soy sauce
- 2, chopped Green onions
- 1 large, julienned Carrot
- 1 medium, sliced Onion
- 2, boneless and skinless Chicken breast
- 4 cups, warm Cooked rice
- 2 tablespoons Vegetable oil

Instructions
- In a large skillet, heat the vegetable oil over medium heat.

- Return the sliced chicken to the skillet with the sautéed onion and carrot.
- In a small bowl, whisk together the soy sauce, mirin, and sugar until the sugar is fully dissolved. Pour this sauce over the chicken and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- In a separate non-stick pan, fry the eggs sunny-side up, cooking until the whites are set but the yolks remain runny, about 3-4 minutes.
- To assemble the donburi, divide the warm cooked rice into four bowls. Generously top each bowl with the chicken and vegetable mixture.
- Carefully place a fried egg on top of each bowl, ensuring the yolk remains intact.
