Ingredients

Nori seaweed
2 sheets, cut into strips
Eggs
4 large
Sugar
1 tablespoon
Mirin
2 tablespoons
Soy sauce
3 tablespoons

1 large, julienned

1 medium, sliced
Chicken breast
2, boneless and skinless
Cooked rice
4 cups, warm

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chicken breasts to the skillet and sear for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
  3. In the same skillet, add the sliced onion and julienned carrot. Sauté for about 3-4 minutes until they are softened and fragrant, stirring occasionally.
  4. Return the sliced chicken to the skillet with the sautéed onion and carrot.
  5. In a small bowl, whisk together the soy sauce, mirin, and sugar until the sugar is fully dissolved. Pour this sauce over the chicken and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. In a separate non-stick pan, fry the eggs sunny-side up, cooking until the whites are set but the yolks remain runny, about 3-4 minutes.
  7. To assemble the donburi, divide the warm cooked rice into four bowls. Generously top each bowl with the chicken and vegetable mixture.
  8. Carefully place a fried egg on top of each bowl, ensuring the yolk remains intact.
  9. Garnish with chopped green onions and strips of nori seaweed for a delightful finish.
