Dosa Masala is a beloved South Indian dish that combines the crispy texture of a golden dosa with a hearty, spiced potato filling. This dish is not only a staple in Indian households but also a popular street food that captivates taste buds with its aromatic spices and vibrant flavors. Traditionally, dosas are served with coconut chutney and sambar, making for a perfect breakfast or snack that transports you straight to the bustling streets of South India.

Ingredients

Dosa batter
2 cups
Potatoes
3 medium, boiled and mashed
Onion
1 medium, finely chopped
Green chilies
2, finely chopped (adjust to taste)
Ginger
1 inch, grated
Mustard seeds
1 teaspoon
Curry leaves
10-12 leaves
Turmeric powder
1/2 teaspoon
Salt
to taste
Fresh coriander leaves
2 tablespoons, chopped
Oil
for cooking
Coconut chutney (optional)
for serving
Sambar (optional)
for serving

Instructions

  1. Heat oil in a pan over medium heat. Add the mustard seeds and let them splutter, releasing their nutty aroma.
  2. Add the curry leaves, finely chopped onion, green chilies, and grated ginger to the pan. Sauté until the onions turn translucent and fragrant.
  3. Stir in the turmeric powder and mashed potatoes. Mix well, and cook for an additional 2-3 minutes to allow the flavors to meld.
  4. Season the mixture with salt and fold in the chopped coriander leaves. Turn off the heat and set aside the potato filling.
  5. In a non-stick pan or a dosa tawa, heat a little oil over medium-high heat.
  6. Pour a ladleful of dosa batter into the center of the pan and spread it in a circular motion to form a thin, even layer.
  7. Drizzle some oil around the edges of the dosa and cook until the underside turns golden brown and crispy.
  8. Place a generous portion of the potato masala filling in the center of the dosa and fold it over.
  9. Serve the dosa hot with coconut chutney and sambar on the side for a complete experience.
