Dosa Masala

Dosa Masala is a popular South Indian dish made with crispy dosa and a flavorful potato masala filling.

Ingredients

  • Fresh coriander leaves (2 tablespoons, chopped)
  • Oil (2 tablespoons)
  • Salt (to taste)
  • Turmeric powder (1/2 teaspoon)
  • Mustard seeds (1 teaspoon)
  • Curry leaves (10 leaves)
  • Ginger (1-inch piece, grated)
  • Green chilies (2, finely chopped)
  • Onion (1 large, finely chopped)
  • Potatoes (4 medium, boiled and mashed)
  • Dosa batter (2 cups)

Instructions

  1. Heat oil in a pan and add mustard seeds. Let them splutter.
  2. Add curry leaves, chopped onion, green chilies, and grated ginger. Saute until onions turn translucent.
  3. Add turmeric powder and mashed potatoes. Mix well and cook for 2-3 minutes.
  4. Add salt and chopped coriander leaves. Mix again and turn off the heat.
  5. Heat a non-stick pan or a dosa tawa.
  6. Pour a ladleful of dosa batter onto the center of the pan and spread it in a circular motion to make a thin dosa.
  7. Drizzle some oil around the edges of the dosa and cook until it turns golden brown and crispy.
  8. Place a portion of the potato masala filling in the center of the dosa and fold it over.
  9. Serve hot with coconut chutney and sambar.
