Dosa Masala

- 10-12 leaves Curry leaves
- 1/2 teaspoon Turmeric powder

Instructions
- Heat oil in a pan over medium heat. Add the mustard seeds and let them splutter, releasing their nutty aroma.
- Add the curry leaves, finely chopped onion, green chilies, and grated ginger to the pan. Sauté until the onions turn translucent and fragrant.
- Stir in the turmeric powder and mashed potatoes. Mix well, and cook for an additional 2-3 minutes to allow the flavors to meld.
- Season the mixture with salt and fold in the chopped coriander leaves. Turn off the heat and set aside the potato filling.
- In a non-stick pan or a dosa tawa, heat a little oil over medium-high heat.
- Pour a ladleful of dosa batter into the center of the pan and spread it in a circular motion to form a thin, even layer.
- Drizzle some oil around the edges of the dosa and cook until the underside turns golden brown and crispy.
- Place a generous portion of the potato masala filling in the center of the dosa and fold it over.
