Ingredients

Yellow potatoes
2 lbs, peeled and cut into chunks
Kale
1 lb, tough stems removed, chopped
Smoked sausage
1 lb, preferably dutch rookworst
Butter
4 tablespoons
Milk
1/2 cup, warm
Salt
to taste
Black Pepper
to taste
Dijon Mustard
2 tablespoons

Instructions

  1. Place the potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
  2. In a separate pot, bring salted water to a boil, add the chopped kale, and cook until wilted and tender, about 5 minutes. Drain well.
  3. As the potatoes and kale are cooking, heat a frying pan over medium heat. Cook the smoked sausage according to package instructions, until browned and heated through.
  4. Drain the cooked potatoes, return them to the pot and mash them with a potato masher or fork until smooth.
  5. Add the butter and warm milk to the mashed potatoes and stir until well combined and creamy. If necessary, adjust with more milk to achieve desired consistency.
  6. Stir the cooked, drained kale into the mashed potatoes, mixing until well combined. Season with salt, pepper, and Dijon mustard, stirring well.
  7. Slice the cooked smoked sausage into bite-sized pieces. Serve the sausage over the stamppot.
  8. Enjoy this comforting dish, best served hot, with a dollop of additional mustard on the side if desired.
