Authentic Dutch Stamppot

Ingredients
- Yellow potatoes
- 2 lbs, peeled and cut into chunks
- Kale
- 1 lb, tough stems removed, chopped
- Smoked sausage
- 1 lb, preferably dutch rookworst
- Butter
- 4 tablespoons
- Milk
- 1/2 cup, warm
- Salt
- to taste
- Black Pepper
- to taste
- Dijon Mustard
- 2 tablespoons
Instructions
- Place the potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
- In a separate pot, bring salted water to a boil, add the chopped kale, and cook until wilted and tender, about 5 minutes. Drain well.
- As the potatoes and kale are cooking, heat a frying pan over medium heat. Cook the smoked sausage according to package instructions, until browned and heated through.
- Drain the cooked potatoes, return them to the pot and mash them with a potato masher or fork until smooth.
- Add the butter and warm milk to the mashed potatoes and stir until well combined and creamy. If necessary, adjust with more milk to achieve desired consistency.
- Stir the cooked, drained kale into the mashed potatoes, mixing until well combined. Season with salt, pepper, and Dijon mustard, stirring well.
- Slice the cooked smoked sausage into bite-sized pieces. Serve the sausage over the stamppot.
- Enjoy this comforting dish, best served hot, with a dollop of additional mustard on the side if desired.
