Instructions
- In a large bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
- In another bowl, whisk together the melted butter, granulated sugar, eggs, and vanilla extract until smooth and creamy.
- Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. If the dough is too sticky, add a little more flour until manageable.
- Divide the dough into 10 equal pieces and roll each piece into a ball.
- Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the iron if necessary.
- Press each ball of dough into the waffle iron, cooking until golden brown and crisp, about 2-3 minutes per waffle.
- While the waffles are cooking, prepare the filling by combining the brown sugar, dark corn syrup, and cinnamon in a saucepan over medium heat. Stir continuously until the sugar is fully dissolved and the mixture is smooth and slightly thickened.
- Once the waffles are done, carefully split them in half horizontally while they are still warm, using a serrated knife.
- Spread a generous layer of the warm syrup filling on one half of each waffle, then gently press the other half on top to create a sandwich.
- Allow the filled waffles to cool for a few minutes before serving. Enjoy them warm or at room temperature!
Tips
- For an extra touch, add a pinch of nutmeg or ginger to the filling for a spicier flavor.
- Stroopwafels pair wonderfully with coffee or tea, making them a perfect afternoon snack.
- To store, keep them in an airtight container to maintain their crispiness.
