Dwaeji Gukbap is a beloved Korean comfort food that combines tender pork belly with hearty rice in a savory broth. Perfect for cold weather, this dish brings warmth and joy to any table. Ingredients

Water
8 cups
Pork belly
1 lb, cut into chunks
Garlic
6 cloves, minced
Soy sauce
1/4 cup
Sesame oil
2 tablespoons
Rice
1 cup, rinsed
Salt
to taste
Pepper
to taste
Green onions
3, chopped

Instructions

  1. Rinse the pork belly under cold water and place it in a large pot with 8 cups of water. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to low and let it simmer for about 10 minutes. Skim off any foam that forms on the surface.
  3. Add the minced garlic, soy sauce, and sesame oil to the pot. Stir well to combine, then cover and simmer for about 2 hours, or until the pork is very tender.
  4. Carefully remove the pork from the pot and let it cool slightly. Once cool, shred the meat into bite-sized pieces using two forks.
  5. Return the shredded pork to the pot and add the rinsed rice. Simmer for another 20 minutes, or until the rice is fully cooked and tender.
  6. Taste the soup and season with salt and pepper as needed. Stir in the chopped green onions just before serving.
