Dwaeji Gukbap
Dwaeji Gukbap is a beloved Korean comfort food that combines tender pork belly with hearty rice in a savory broth. Perfect for cold weather, this dish brings warmth and joy to any table. Traditionally, it's enjoyed as a hearty meal after a night of celebration, reflecting the rich culinary heritage of Korea. The combination of garlic, sesame oil, and soy sauce creates a deeply satisfying flavor that lingers with every spoonful.
Ingredients
- Water
- 8 cups
- Pork belly
- 1 lb, cut into chunks
- Garlic
- 6 cloves, minced
- Soy sauce
- 1/4 cup
- Sesame oil
- 2 tablespoons
- Rice
- 1 cup, rinsed
- Salt
- to taste
- Pepper
- to taste
- Green onions
- 3, chopped
Instructions
- Rinse the pork belly under cold water and place it in a large pot with 8 cups of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low and let it simmer for about 10 minutes. Skim off any foam that forms on the surface.
- Add the minced garlic, soy sauce, and sesame oil to the pot. Stir well to combine, then cover and simmer for about 2 hours, or until the pork is very tender.
- Carefully remove the pork from the pot and let it cool slightly. Once cool, shred the meat into bite-sized pieces using two forks.
- Return the shredded pork to the pot and add the rinsed rice. Simmer for another 20 minutes, or until the rice is fully cooked and tender.
- Taste the soup and season with salt and pepper as needed. Stir in the chopped green onions just before serving.
Tips
- For a spicier version, add sliced red chili peppers or a spoonful of gochujang (Korean chili paste) to the pot with the garlic.
- Feel free to add vegetables like mushrooms, carrots, or daikon radish for additional flavor and nutrition.
- Serve with a side of kimchi for a classic Korean meal.
