
Egg and Vegetable Stir Fry
This delicious egg and vegetable stir fry is packed with nutritious vegetables and protein-rich eggs.
Ingredients
- Green onions (2, chopped (for garnish))
- Salt and pepper (to taste)
- Sesame oil (1 tablespoon)
- Soy sauce (2 tablespoons)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Snow peas (1 cup)
- Carrots (2 medium, julienned)
- Broccoli florets (1 cup)
- Bell peppers (1 large, thinly sliced)
- Eggs (4)
Instructions
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the garlic and ginger and cook for 1 minute until fragrant.
- Add the bell peppers, broccoli, carrots, and snow peas. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs with a spatula until cooked through.
- Combine the eggs with the vegetables and stir in the soy sauce. Season with salt and pepper to taste.
- Cook for an additional 1-2 minutes until everything is heated through.
- Serve the egg and vegetable stir fry hot, garnished with chopped green onions.
