Egg and Vegetable Stir Fry

This delicious egg and vegetable stir fry is packed with nutritious vegetables and protein-rich eggs.

Ingredients

  • Green onions (2, chopped (for garnish))
  • Salt and pepper (to taste)
  • Sesame oil (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Ginger (1 teaspoon, grated)
  • Garlic (2 cloves, minced)
  • Snow peas (1 cup)
  • Carrots (2 medium, julienned)
  • Broccoli florets (1 cup)
  • Bell peppers (1 large, thinly sliced)
  • Eggs (4)

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Add the bell peppers, broccoli, carrots, and snow peas. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  4. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs with a spatula until cooked through.
  5. Combine the eggs with the vegetables and stir in the soy sauce. Season with salt and pepper to taste.
  6. Cook for an additional 1-2 minutes until everything is heated through.
  7. Serve the egg and vegetable stir fry hot, garnished with chopped green onions.
