Start your day off right with this mouth-watering, easy-to-make Cheesy Vegetable Frittata. Loaded with vibrant bell peppers, sweet onions, and a generous layer of sharp cheddar, this delightful dish is perfect for breakfast, brunch, or even a light dinner. Originating from Italy, the frittata is a versatile egg-based classic that can be adapted to include a variety of different fillings. This particular recipe showcases a traditional vegetable and cheese combination, offering a comforting, wholesome meal that the whole family will love.

Serves 4

Ingredients

Cheddar cheese
1 cup, shredded
Bell pepper
1, diced
Onion
1, diced
Olive oil
1 tablespoon
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Milk
1/4 cup
Eggs
6, large

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well-combined.
  3. Heat the olive oil in an oven-safe skillet over medium heat.
  4. Add the diced onion and bell pepper to the skillet and sauté until they are softened and slightly caramelized, about 5 minutes.
  5. Pour the egg mixture over the sautéed vegetables in the skillet, ensuring the vegetables are evenly distributed.
  6. Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are fully set and the cheese is melted and bubbly.
  8. Allow the frittata to cool for a few minutes before slicing and serving. This will make it easier to cut into neat slices.

Tips

  • 💡 For a healthier twist, try using low-fat cheese or replacing some of the eggs with egg whites.
  • 💡 Feel free to use any vegetables you have on hand. This recipe is a great way to use up leftover veggies.
