
Egg Noodles with Stir Fried Vegetables
This delicious dish features egg noodles tossed with a medley of colorful stir-fried vegetables.
Ingredients
- Green onions (2, sliced)
- Salt and pepper (to taste)
- Sesame oil (1 tablespoon)
- Soy sauce (3 tablespoons)
- Broccoli florets (2 cups)
- Bell peppers (2, thinly sliced)
- Carrots (2, julienned)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Vegetable oil (2 tablespoons)
- Egg noodles (8 ounces)
Instructions
- Cook the egg noodles according to package instructions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger to the skillet and stir-fry for 1 minute.
- Add julienned carrots, sliced bell peppers, and broccoli florets to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are crisp-tender.
- In a small bowl, whisk together soy sauce and sesame oil.
- Add the cooked egg noodles to the skillet and pour the soy sauce mixture over them. Toss everything together to coat the noodles and vegetables evenly.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
