Start your morning off right with these vibrant Spicy Chorizo and Scrambled Eggs Tacos! The bold flavor of chorizo combined with creamy scrambled eggs makes for a hearty breakfast that's both satisfying and delicious. Topped with fresh avocado, zesty salsa, and a sprinkle of cilantro, these tacos bring a burst of color and flavor to your breakfast table. This recipe pays homage to traditional Mexican breakfasts, where chorizo is a beloved staple, offering a delightful kick to any morning meal.

Serves 6

Ingredients

Chorizo sausage
8 ounces, casings removed
Eggs
6, large
Milk
1/4 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Fresh cilantro
1/4 cup, chopped
Tortillas
6, corn or flour
Avocado
1, sliced
Salsa
1 cup, your choice

Instructions

  1. In a large skillet, heat the chorizo over medium heat. Cook until browned and cooked through, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.
  2. While the chorizo is cooking, whisk together the eggs, milk, salt, and black pepper in a bowl until well combined.
  3. Once the chorizo is cooked, reduce the heat to low and pour the egg mixture into the skillet with the chorizo.
  4. Gently stir the eggs and chorizo together, cooking until the eggs are scrambled and cooked to your desired doneness, about 3-5 minutes.
  5. Remove from heat and fold in the chopped cilantro for a fresh touch.
  6. Warm the tortillas in a separate skillet or microwave until pliable.
  7. To assemble, place a generous portion of the chorizo and egg mixture on each tortilla.
  8. Top with sliced avocado and a spoonful of salsa.
  9. Serve immediately and enjoy your delicious breakfast tacos!

Tips

  • 💡 For added flavor, try adding diced tomatoes or bell peppers to the egg mixture.
  • 💡 If you prefer a milder taste, opt for a non-spicy chorizo or reduce the amount used.
  • 💡 These tacos also pair wonderfully with a dollop of sour cream or a sprinkle of cheese.
