Potatoes
4 medium, grated
Onion
1 small, finely chopped
Green onions
2, chopped
Salt
to taste
Pepper
to taste
Butter
2 tablespoons
Eggs
4 large
Cheddar cheese
1 cup, shredded

Instructions

  1. Begin by placing the grated potatoes in a clean kitchen towel. Squeeze out any excess moisture to ensure crispy hashbrowns.
  2. In a large bowl, combine the grated potatoes, chopped onion, salt, and pepper. Mix well to evenly distribute the seasonings.
  3. Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted, add half of the potato mixture to the skillet.
  4. Press down the mixture with a spatula to form a flat layer. Cook for 8-10 minutes until the bottom is golden brown and crispy.
  5. Carefully flip the hash brown patty and cook for an additional 8-10 minutes until the other side is also golden brown and crispy.
  6. Transfer the cooked hash brown patty to a plate and keep warm. Repeat the process with the remaining potato mixture.
  7. In the same skillet, melt the remaining tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper.
  8. To serve, place a hash brown patty on each plate, top with a cooked egg, and sprinkle generously with shredded cheddar cheese and chopped green onions.
  9. Serve hot and enjoy your delicious breakfast!
