Ingredients

Vegetable oil
2 tablespoons
Cooked rice
2 cups
Eggs
4 large
Soy sauce
3 tablespoons
Green onions
4, chopped (whites and greens separated)
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Optional vegetables (carrots, peas, bell peppers)
1 cup, diced

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat until shimmering.
  2. Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 2-3 minutes, allowing the rice to heat through and develop a slight crispiness.
  3. If using optional vegetables, add them now and stir-fry for an additional 2 minutes until they are tender.
  4. Push the rice (and vegetables, if added) to one side of the skillet, creating a space in the center. Crack the eggs into this empty space.
  5. Using a spatula, scramble the eggs gently until they are just set, then mix them into the rice, breaking the eggs up as you go.
  6. Pour in the soy sauce, add the chopped green onion whites, salt, and black pepper. Stir everything together until well combined and heated through, about 2-3 minutes.
  7. Finally, fold in the remaining green onion greens for a fresh, vibrant finish.
