Ingredients

Smoked sausage
1 pound, sliced
Bacon
4 slices, diced
Onion
1 large, diced
Carrots
2 medium, sliced
Potatoes
3 medium, diced
Cabbage
2 cups, chopped
Green beans
1 cup, trimmed and cut into pieces
Beef broth
6 cups
Bay leaf

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Once done, remove the bacon bits and set aside, leaving the rendered bacon fat in the pot.
  2. Add the diced onion to the pot and sauté until softened and translucent, about 3-5 minutes.
  3. Incorporate the sliced carrots, diced potatoes, chopped cabbage, and trimmed green beans into the pot. Pour in the beef broth and add the bay leaf and dried thyme. Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, or until the vegetables are tender.
  5. Stir in the sliced smoked sausage and simmer for an additional 10 minutes until heated through.
  6. Remove the bay leaf and adjust seasoning with more salt and pepper if necessary.
