Ingredients
- Olive oil
- 2 tablespoons

- Bay leaves

- Tomatoes
- 4 medium, diced
- White wine
- 1 cup
- Garlic
- 4 cloves, minced
- Chicken
- 4 pieces (legs or thighs preferred)
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Season the chicken pieces with salt and pepper. Add them to the pot and cook until browned on all sides, about 8-10 minutes.
- Add the minced garlic to the pot and sauté for another minute until fragrant.
- Pour in the white wine, scraping the bottom of the pot to deglaze and incorporate any browned bits.
- Add the diced tomatoes, bay leaves, and additional salt and pepper to taste. Stir everything to combine.
- Cover the pot and let it simmer gently for about 45-60 minutes, or until the chicken is cooked through and tender. Stir occasionally to ensure even cooking.
- Remove the bay leaves before serving.
- Serve the Empordanesa Chicken hot, accompanied by crusty bread or fluffy rice to soak up the delicious sauce.
