Servings: 6
Ingredients
- Fresh cilantro (1/2 cup, chopped (for garnish))
- Shredded cheese (2 cups (cheddar or mexican blend))
- Salt (1 teaspoon)
- Cumin (1 teaspoon)
- Chili powder (1 tablespoon)
- Tomato sauce (2 cups)
- Garlic (2 cloves, minced)
- Onion (1 medium, chopped)
- Vegetable oil (2 tablespoons)
- Refried beans (2 cups)
- Corn tortillas (12)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the tomato sauce, chili powder, cumin, and salt to the skillet. Stir well and let the sauce simmer for 5 minutes to allow the flavors to meld.
- In a separate skillet, warm the corn tortillas for a few seconds on each side until pliable. This step prevents the tortillas from cracking when rolled.
- Spread about 2 tablespoons of refried beans onto each tortilla and roll them up tightly to form enchiladas.
- Place the rolled enchiladas seam side down in a baking dish. Pour the prepared sauce over them, ensuring they are fully covered.
- Sprinkle the shredded cheese evenly on top of the enchiladas.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
