This refreshing salad combines crisp endive, tender asparagus, and a tangy vinaigrette dressing.
Ingredients
- Salt and pepper (to taste)
- Honey (1 teaspoon)
- Dijon mustard (1 teaspoon)
- Olive oil (3 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh parsley (2 tablespoons, chopped)
- Walnuts (1/4 cup, chopped)
- Feta cheese (1/2 cup, crumbled)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Asparagus (1 bunch, trimmed and blanched)
- Endive (2 heads, separated into leaves)
Instructions
- In a large bowl, combine the endive leaves, blanched asparagus, cherry tomatoes, red onion, feta cheese, walnuts, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette dressing.
