Ingredients

Puff pastry
1 sheet, thawed
Butter
2 tablespoons
Onion
1 large, thinly sliced
Brown sugar
1 tablespoon
Balsamic vinegar
1 tablespoon
Endive
2 heads, sliced
Goat cheese
4 ounces, crumbled
Fresh thyme
1 tablespoon, chopped
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheet on a lightly floured surface and cut it into 6 equal squares.
  3. Place the pastry squares on a baking sheet lined with parchment paper.
  4. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15 minutes.
  5. Stir in the brown sugar and balsamic vinegar, cooking for an additional 2 minutes until well combined. Remove from heat and let the mixture cool slightly.
  6. Divide the caramelized onions evenly among the puff pastry squares, spreading them out in the center.

  8. Season with salt and pepper to taste.
