- Puff pastry
- 1 sheet, thawed
- Endive
- 3 cups, sliced
- Gorgonzola cheese
- 4 oz, crumbled
- Eggs
- 2 large
- Heavy cream
- 1/2 cup
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Olive oil
- 2 tablespoons
- Fresh herbs (optional)

Instructions
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out the thawed puff pastry sheet to fit a tart pan (approximately 9 inches). Carefully transfer the pastry to the tart pan and gently press it into the bottom and sides. Trim any excess pastry hanging over the edges.

- Carefully pour the egg mixture over the endive and gorgonzola, ensuring an even distribution throughout.
