
Endive and Sardine Salad
This refreshing salad combines crisp endive leaves with flavorful sardines and a tangy vinaigrette dressing.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 teaspoon)
- Extra virgin olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh parsley (2 tablespoons, chopped)
- Kalamata olives (1/4 cup, pitted)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Canned sardines (1 can, drained)
- Endive (2 heads, separated into leaves)
Instructions
- In a large bowl, combine the endive leaves, cherry tomatoes, red onion, olives, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the vinaigrette dressing.
- Drizzle the dressing over the salad and toss gently to coat.
