Ingredients

Potatoes
2 pounds, boiled and diced
Red onion
1 medium, finely chopped
Bell pepper
1 medium, diced (any color)
Cucumber
1 medium, diced
Green olives
1/2 cup, pitted and sliced
Hard-boiled eggs
3, peeled and chopped
Mayonnaise
1 cup
Fresh parsley
1/4 cup, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. Start by boiling the potatoes in salted water until fork-tender. Drain and let them cool before dicing.
  2. In a large mixing bowl, combine the diced potatoes, chopped red onion, diced bell pepper, diced cucumber, sliced green olives, and chopped hard-boiled eggs.
  3. In a separate small bowl, whisk together the mayonnaise, chopped fresh parsley, salt, and black pepper until smooth and well combined.
  4. Pour the mayonnaise mixture over the potato and vegetable mixture. Gently toss until everything is well coated with the dressing, taking care not to mash the potatoes.
