Green cabbage
4 cups, finely shredded
Carrot
1 large, grated
Red bell pepper
1, thinly sliced
Red onion
1 small, thinly sliced
Cilantro
1/4 cup, chopped
Lime juice
1/4 cup
Olive oil
2 tablespoons
Honey
1 tablespoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. In a large mixing bowl, combine the shredded cabbage, grated carrot, sliced red bell pepper, sliced red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the cabbage mixture and toss to coat evenly.
  4. Let the coleslaw sit for at least 15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature as a refreshing side dish.
