
Ensalada Rusa
Ensalada Rusa, also known as Russian Salad, is a classic Spanish dish made with boiled potatoes, carrots, peas, and mayonnaise.
Ingredients
- Parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Mustard (1 tablespoon)
- Mayonnaise (1/2 cup)
- Hard (boiled eggs - 2, chopped)
- Pickles (4 small, diced)
- Peas (1 cup, cooked)
- Carrots (2 medium, boiled and diced)
- Potatoes (4 medium, boiled and diced)
Instructions
- In a large bowl, combine the boiled and diced potatoes, carrots, peas, pickles, and chopped hard-boiled eggs.
- In a separate small bowl, mix together the mayonnaise, mustard, salt, and pepper.
- Pour the mayonnaise mixture over the vegetables and gently toss until everything is well coated.
- Garnish with chopped parsley.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled and enjoy!
