
Ensaladilla Rusa
Ensaladilla Rusa is a classic Spanish potato salad made with boiled potatoes, vegetables, and mayonnaise.
Ingredients
- Salt and pepper (to taste)
- Lemon juice (1 tablespoon)
- Mayonnaise (1/2 cup)
- Canned tuna (1 can, drained)
- Pickles (4, diced)
- Red bell pepper (1, diced)
- Green beans (1 cup, boiled and chopped)
- Peas (1 cup, boiled)
- Carrots (2 medium, boiled and diced)
- Potatoes (4 medium, boiled and diced)
Instructions
- In a large bowl, combine the boiled and diced potatoes, carrots, peas, green beans, red bell pepper, pickles, and canned tuna.
- In a separate small bowl, mix together the mayonnaise, lemon juice, salt, and pepper.
- Pour the mayonnaise mixture over the vegetables and tuna. Gently toss until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve chilled and enjoy!
