Ensaladilla Rusa

Ensaladilla Rusa is a classic Spanish potato salad made with boiled potatoes, vegetables, and mayonnaise.

Ingredients

  • Salt and pepper (to taste)
  • Lemon juice (1 tablespoon)
  • Mayonnaise (1/2 cup)
  • Canned tuna (1 can, drained)
  • Pickles (4, diced)
  • Red bell pepper (1, diced)
  • Green beans (1 cup, boiled and chopped)
  • Peas (1 cup, boiled)
  • Carrots (2 medium, boiled and diced)
  • Potatoes (4 medium, boiled and diced)

Instructions

  1. In a large bowl, combine the boiled and diced potatoes, carrots, peas, green beans, red bell pepper, pickles, and canned tuna.
  2. In a separate small bowl, mix together the mayonnaise, lemon juice, salt, and pepper.
  3. Pour the mayonnaise mixture over the vegetables and tuna. Gently toss until everything is well coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Serve chilled and enjoy!
