Ingredients

Salt cod
1 pound, desalted
Tomatoes
2 large, diced
Onions
1 medium, thinly sliced
Green bell pepper
1, thinly sliced
Red bell pepper
1, thinly sliced
Black olives
1/2 cup, pitted and sliced
Olive oil
1/4 cup
White wine vinegar
2 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Soak the salt cod in cold water for 24-48 hours, changing the water 2-3 times a day to fully desalt it.
  2. Once the cod is desalted, remove it from the water and shred it into small pieces using your hands, discarding any skin or bones.
  3. In a large mixing bowl, combine the shredded cod, diced tomatoes, sliced onions, and sliced bell peppers.
  4. Add the sliced black olives to the bowl and mix gently to combine all ingredients.
  5. In a separate small bowl, whisk together the olive oil and white wine vinegar. Season the dressing with salt and pepper to taste.
  6. Pour the dressing over the salad and toss well to ensure everything is evenly coated.
