Ingredients
- Salt cod
- 1 pound, desalted
- Tomatoes
- 2 large, diced
- Onions
- 1 medium, thinly sliced
- Green bell pepper
- 1, thinly sliced
- Red bell pepper
- 1, thinly sliced
- Black olives
- 1/2 cup, pitted and sliced
- Olive oil
- 1/4 cup
- White wine vinegar
- 2 tablespoons
- Salt

- Black pepper

Instructions
- Soak the salt cod in cold water for 24-48 hours, changing the water 2-3 times a day to fully desalt it.
- Once the cod is desalted, remove it from the water and shred it into small pieces using your hands, discarding any skin or bones.
- In a large mixing bowl, combine the shredded cod, diced tomatoes, sliced onions, and sliced bell peppers.
- Add the sliced black olives to the bowl and mix gently to combine all ingredients.
- In a separate small bowl, whisk together the olive oil and white wine vinegar. Season the dressing with salt and pepper to taste.
- Pour the dressing over the salad and toss well to ensure everything is evenly coated.
- For the best flavor, let the salad sit for at least an hour in the refrigerator before serving to allow the flavors to meld together.
