
Fajitas
These delicious chicken fajitas are packed with flavor and perfect for a quick and easy weeknight dinner.
Ingredients
- Cilantro (1/4 cup, chopped)
- Salsa (1/2 cup)
- Guacamole (1/2 cup)
- Sour cream (1/2 cup)
- Tortillas (8, flour or corn)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Cumin (1 teaspoon)
- Chili powder (1 tablespoon)
- Garlic (2 cloves, minced)
- Olive oil (2 tablespoons)
- Lime (1, juiced)
- Onion (1, thinly sliced)
- Bell peppers (2, thinly sliced)
- Chicken breasts (2, boneless and skinless)
Instructions
- In a bowl, combine the lime juice, olive oil, minced garlic, chili powder, cumin, paprika, salt, and pepper to make the marinade.
- Slice the chicken breasts into thin strips and place them in the marinade. Let it marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook until they are tender and slightly charred, about 5 minutes.
- Return the cooked chicken to the skillet and toss with the peppers and onion to combine.
- Warm the tortillas in a separate skillet or in the oven.
- Serve the chicken fajita mixture on warm tortillas and top with sour cream, guacamole, salsa, and chopped cilantro.
- Fold the tortillas and enjoy!
