Falafel Burger

Ingredients
- 1 can (15 oz), drained and rinsed Canned chickpeas
- 2 cloves, minced Garlic
- 1/2 cup, chopped Fresh parsley
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1/2 cup Bread crumbs
- 3 tablespoons, for cooking Olive oil
- 4, whole wheat or your choice Burger buns
- 4 leaves, for topping Lettuce
- 1, sliced Tomato
- 1/2, thinly sliced Onion
- 1/2 cup, sliced Pickles
- 1/2 cup Tahini sauce
- 1 tablespoon Lemon juice
- 2 tablespoons Water
- to taste Salt

Instructions
- In a food processor, combine the drained chickpeas, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Process the mixture until smooth but still slightly chunky.
- Transfer the chickpea mixture to a bowl and stir in the bread crumbs until well combined. If the mixture is too wet, add a little more bread crumbs.
- Form the mixture into 4 equal-sized patties, about 1/2 inch thick.
- Heat olive oil in a skillet over medium heat. Once hot, add the patties, being careful not to overcrowd the pan. Cook for 5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and salt in a small bowl until smooth and creamy. Adjust the consistency with more water if necessary.
- Once the patties are cooked, assemble the burgers on the buns. Start with a lettuce leaf, then add a patty, followed by sliced tomato, onion, and pickles. Drizzle with tahini sauce before placing the top bun on.
- Serve immediately and enjoy your delicious Falafel Burgers!
Tips
- For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the chickpea mixture.
