Ingredients

  • Canned chickpeas (1 can (15 oz), drained and rinsed)
  • Garlic (2 cloves, minced)
  • Fresh parsley (1/2 cup, chopped)
  • Ground cumin (1 teaspoon)
  • Ground coriander (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Bread crumbs (1/2 cup)
  • Olive oil (3 tablespoons, for cooking)
  • Burger buns (4, whole wheat or your choice)
  • Lettuce (4 leaves, for topping)
  • Tomato (1, sliced)
  • Onion (1/2, thinly sliced)
  • Pickles (1/2 cup, sliced)
  • Tahini sauce (1/2 cup)
  • Lemon juice (1 tablespoon)
  • Water (2 tablespoons)
  • Salt (to taste)

Instructions

  1. In a food processor, combine the drained chickpeas, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Process the mixture until smooth but still slightly chunky.
  2. Transfer the chickpea mixture to a bowl and stir in the bread crumbs until well combined. If the mixture is too wet, add a little more bread crumbs.
  3. Form the mixture into 4 equal-sized patties, about 1/2 inch thick.
  4. Heat olive oil in a skillet over medium heat. Once hot, add the patties, being careful not to overcrowd the pan. Cook for 5 minutes on each side or until golden brown and crispy.
  5. While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and salt in a small bowl until smooth and creamy. Adjust the consistency with more water if necessary.
  6. Once the patties are cooked, assemble the burgers on the buns. Start with a lettuce leaf, then add a patty, followed by sliced tomato, onion, and pickles. Drizzle with tahini sauce before placing the top bun on.
